"Peruvian Ceviche" 🇵🇪 is the fresh and delicious result of mixing: Fish marinated with lemon. Then garlic, coriander and Peruvian chili pepper came into play to add the fish more fresh flavor. Then red onion, Peruvian corn and Peruvian 'canchita' (Peruvian fried corn) also entered together to have a moment of glory. And to finish it, the sweet potato and a lettuce leaf, they didn't want to be out of this artwork.

"Causa de Lima" is an explosion of fresh flavor. Mashed potatoes, lemon and Peruvian chili paste is the base of the dish. Ají de Gallina
Aji de Gallina is a creamy, spicy chicken dish from Peru that owes its name to the yellow aji amarillo chili. Aji is the general name for chili peppers in South America; the name Aji Amarillo also refers to the Capsicum baccatum group that is predominant there. Aji Amarillo is one of the milder varieties (but this is probably a matter of taste, as we find it hot enough). The dish is very rich and filling as it is enriched with milk, bread and cheese. Aji de Gallina, which is traditionally served with rice, is also accompanied by eggs, potatoes and black olives.
